In a liquid form acacia honey is light straw to light green in colour, sometimes it can even be colourless, therefore it is regarded the lightest of all the honey types. After crystallisation it becomes white to creamy-yellow. Because of its high content of fruit sugar, fructose, it remains liquid for a long time and it crystallises very slowly. Acacia honey, similarly to acacia flowers, contains flavonoids and essential acacia oil.
It has a delicate, subtle, floral aroma deriving from acacia flowers. It tastes sweet, delicate and a bit acidic. It is said to be the sweetest among all the types of honey. Because of its delicate taste and aroma and a proper consistency it is the most popular sweetener. It is children who particularly like it therefore it is recommended as a substitute to sweeten meals.
