After crystallisation it becomes white to creamy-yellow. Because of its high content of fruit sugar, fructose, it remains liquid for a long time and it crystallises very slowly. Acacia honey, similarly to acacia flowers, contains flavonoids and essential acacia oil.
It has a delicate, subtle, floral aroma deriving from acacia flowers. It tastes sweet, delicate and a bit acidic. It is said to be the sweetest among all the types of honey. Because of its delicate taste and aroma and a proper consistency it is the most popular sweetener. It is children who particularly like it therefore it is recommended as a substitute to sweeten meals.
