Description
Forest honey is the most aromatic and unpredictable of all honey types. It is obtained from spring and summer forest flowers of plants and herbs like wild strawberries, blackberries, acacia and linden. It has an exceptional colour and after crystallisation it becomes golden.
It is exceptionally aromatic and sweet. The colour can be light or dark-amber, depending on the season of the year in which the nectar is collected for a given lot of honey. In a liquid form it is much darker, but with time when it crystallises, it goes pale. It is an excellent addition to desserts, cream, or yoghurt. Forest honey can contain honeydew.
It is difficult to describe the richness of aromas and tastes appearing in forest honey because they depend on the season and the nectar of plants which in a given period of time bees liked most. Each time from the same apiary you can have a totally different unique product. The colour and aroma will be typical of the forest from which it comes.
