Heather honey has a very distinctive flavour of heather and is exceptionally aromatic, which results from its many essential oils in the nectar and pollen of heather flowers. In a liquid form it has an rubin-amber colour and a bit jelly-like consistency which is quite unusual for honey. After crystallisation it becomes orange, sometimes dark brown and has a fine-grained consistency.
Its taste is distinctive, fine, quite unique as for honey and interesting because it is surprisingly bitter , which is a rare phenomenon among all types of honey. It has a very pleasant, original taste and aroma of heather flowers.
What is interesting, honey made from a nectar of light flowers has a more delicate and sweeter taste and a lighter colour, while that made of a nectar of darker flowers is more distinctive in its taste and is darker.
