Description
Honeydew honey is made of, so called, honeydew. It is a sticky, sweet secretion appearing mainly in summer in the form of drops on trees which bees collect and use to produce honey, in the same way as the nectar of flowering plants.
Because of the types of trees from which honeydew is collected Honeydew honeys are divided into coniferous honeydew and deciduous honeydew.
There is also honey of mixed type of honeydew and also honeydew-nectar honey. Typically honeydews have lower levels of glucose and fructose and higher levels of complex sugars. Honeydews don’t normally crystallize due to the reduced levels of glucose. It has a full flavour and aroma, heady, almost pungent, malty and is one of our strongest flavoured honeys.
Great in marinades to give a richness to barbecues or roasts. Full of mineral goodness, a typical trait of honeydews.
